If you have ever wondered how to get perfectly crispy chicken wings without frying, baking powder is your secret weapon.

Baking powder helps draw moisture to the surface the chicken skin, where it evaporates during baking. As the skin dries becomes crisp and golden. No deep fryer required!

Here is why it works so well:

Raises pH levels: Baking powder slightly changes the pH of the chicken skin, helping it to brown more easily. (I always use aluminum-free to avoid any metallic taste)

Dries the skin: It pulls the moisture out, allowing the wings crisp uo in the oven’s dry heat.

Creates a light texture: As it bakes, the baking powder forms tiny bubbles, giving the skin that light, crackly crunch.

Honey Mustard Chicken Wings

Ingredients

WINGS

  • 4 lbs chicken wings-whole or cut up to flats and drummettes
  • 1 tablespoon baking powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

HONEY MUSTARD SAUCE

  • 1/2 cup mayonaise
  • 3 tablespoons yellow mustard
  • 2 tablespoons honey
  • 1 tablespoon white vinegar or lemon juice
  • 1 pinch cayenne pepper

Instructions

WINGS

  • Preheat oven to 425°
  • Line a baking sheet (rimmed) with parchment paper or aluminum foil. Place a wire rack on top and spray with non stick spray.
  • Pat wings dry, then toss in a bowl with spices and baking powder.
  • Arrange wings on wire rack on prepared pan in a single layer.
  • Bake for 20 minutes, flip to other side and bake for another 20 minutes, until crispy

HONEY MUSTARD SAUCE

  • While chicken is cooking-in a small bowl, combine mayonaise, mustard, honey, vinegar and cayenne pepper until well combined.
  • In medium size bowl, add 1/2 cup of the honey mustard sauce, add wings and toss.
  • Place wings back on wire rack and broil for 2-3 minutes
  • Serve with additional honey mustard sauce, if desired
