Ingredients

Whoopie Pie (Cakes)

  • 1/2 cup butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder

Whoopie Pie filling

  • 8 ounce cream cheese, room temperature
  • 2 tablespoons milk
  • 3 tablespoons sugar
  • 2 cups whipping cream
  • 1 teaspoon vanilla

Instructions

Whoopie Pie (Cakes)

  • Preheat oven 375F-Line baking sheet with parchment paper
  • Cream butter and sugar until fluffy. Add egg, milk, vanilla and mix until smooth
  • Add dry ingredients and beat until batter has no lumps
  • Drop by rounded tablespoons onto parchment lined cookie sheet, spacing 2 inches apart. Bake 7-8 minutes, remove from cookie sheet and cool on wire rack.

Whoopie Pie filling

  • Beat together cream cheese, milk, sugar and vanilla until fluffy
  • In separate bowl, beat whipping cream until stiff peaks form. Fold into cream cheese mixture until well incorporated.
  • Spread or pipe filling on flat side of one cake and sandwich with a second one.
