Pumpkin Cranberry Bread
Ingredients
- 2 1/4 cups all purpose flour
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 2 cups granulated sugar
- 1 can (15 oz) pumpkin (I use Libby's Pure Pumpkin)
- 1/2 cup vegetable oil
- 1 1/2 cups fresh cranberries
Instructions
- Preheat oven to 350°
- Grease and flour 2 9 x 5 loaf pans
- Whisk flour, pumpkin pie spice, baking powder and salt in large bowl.
- Combine eggs, sugar, oil and pumpkin in small bowl, beat just until blended.
- Add pumpkin mixture to flour mixture, stir just until combined.
- Fold in cranberries.
- Spoon batter into the 2 loaf pans
- Bake for 55 minutes until wooden pick comes out clean. Cool in pans for 10 minutes, remove to wire rack and cool completely
